    • •Next, add the broccoli florets to the boiling water and blanch for about 1 minute, until their color turns bright green. Remove immediately.

  3. 3.​Sautéing and Stir-frying:​
    • •Heat a wok or large skillet over high heat. Add the cooking oil. When the oil temperature reaches about 60% heat (approx. 120-140°C / 250-285°F), add most of the minced garlic. Sauté over low or medium heat until fragrant and lightly golden, taking care not to burn it.
    • •Turn the heat up to high. Add the carrot slices and stir-fry for a few seconds, then add the thoroughly drained broccoli. Toss or stir quickly to combine.
    • •Optionally, pour in a little cooking wine (approx. 5 g) around the edge of the wok to deglaze and add aroma.
