👨🍳 III.​Cooking Instructions

  1. Prep the Gai Lan​ 🌿
    • Remove old leaves and tough ends from the Gai Lan. If the stems are thick or have fibrous skin, it’s best to peel them with a peeler. ​This is key for a crisp texture without stringiness.​
    • Wash the prepped Gai Lan thoroughly. Soaking in lightly salted water for 10 minutes can help remove potential pesticide residue.
    • Drain well. You can separate the stems and leaves, or cut thicker stems into diagonal sections. ​This helps them heat evenly and absorb flavors better.​
  2. Blanching (Key Step)​​ 💧
    • Bring a pot of water to a rolling boil. Add a pinch of salt and a few drops of cooking oil.
    • First, blanch the ​stems​ for about ​30-45 seconds.
    • Then add the ​leaves​ and continue blanching for another ​15-30 seconds.
    • Total blanching time should not exceed 60 seconds.​​ Remove immediately once the leaves turn bright green. Quickly plunge them into an ice bath or cold water to stop the cooking process. ​This step locks in the vibrant color and crisp texture.​​ Drain thoroughly afterwards.
  3. Aromatics & Stir-Frying​ 🔥
    • Heat the oil in a wok or large skillet over high heat until hot (~160°C / 320°F).
    • Add the minced garlic and julienned ginger. Stir-fry briefly until fragrant (about 20-30 seconds), taking care not to burn them.
    • Immediately add the well-drained Gai Lan. Increase heat to high and stir-fry quickly for ​about 1 minute.
  4. Seasoning & Serving​ 🧂
    • Pour the pre-mixed seasoning sauce along the side of the wok. Quickly toss and stir-fry over high heat to coat the vegetables evenly.
    • Work quickly​ – the entire stir-frying process after adding the Gai Lan should take ​less than 60 seconds. Once the sauce is evenly distributed, remove from heat immediately and serve. ​This preserves the best texture and nutritional value.​
